Leche Flan
A caramel covered flan dessert popular in the Philippines.
2 cup evaporated milk
8 egg yolks
1 tsp. vanilla
1 cup sugar
1 cup sugar (for caramel syrup)
1/2 cup hot water (for caramel syrup)
Beat egg yolks. Add milk, 1 cup sugar, and vanilla. Pour into 1 quart mold. Place the mold in a large pan half filled with water. Bake for 1 hour at 350 degrees. Cool before removing from the mold. If desired, line mold with caramel syrup before pouring in the mixture for baking.
Caramelized Sugar:
Heat sugar on low until brown. Add water to dissolve caramelized sugar to syrup.
